Duncan Taylor has experimented with small Octave casks for more than 40 years.
Using Octave casks promotes more wood interaction with the whisky, allowing for a more rapid melding of wood, air and alcohol. A second maturation of roughly four months in Octave casks produces a refined whisky with enhanced hue, taste, form and character.
The flavour profile is invigorated and more sophisticated, resulting in a mature, well-balanced Scotch Whisky.
This 10-year-old Duncan Taylor Tullibardine Octave was bottled specially for Whisky Drop's Enthusiast Club, with a total outturn of 90 bottles.
Nose: Pepper, hot chocolate, fresh biscuits and clotted cream.
Palate: Caramel-coated apple, sherried fruits, oak spices.
Finish: Medium finish with oak spices carrying through. Plum jam on the very end.
